V30s are rated at 60w each. So yes, 2 of them can handle a 100w amp, unless you are diming the amp (when you can exceed the rated output by as much as 2x). Playing anything up to 6 or 7 on your amp and you will be fine.
There aren't many times when you'd go over 7 on a 100w tube head, so I say green light.
